A cake is a happiness agent that is often ordered or prepared at home to celebrate special occasions. Be it a birthday, anniversary, Christmas, New Year, or Valentine’s Day – a cake simply heightens the spirit of these occasions. There are various types and flavors of cakes and a fresh fruit cake is one of the most popular ones. Made with dollops of cream and fresh seasonal fruits – this cake is crunchy, moist, and yummy.

Ingredients for Cake:
- Castor Sugar- 200 gms
- Self-Rising Flour- 200 gms
- Softened Butter- 200 gms
- Vanilla Extract- 1 tsp
- Eggs- 4
- A pinch of salt
Ingredients for Icing
- Whipping Cream- 500 ml
- Vanilla Extract- 1 tsp
- Icing Sugar- 3 tsp
- Fresh Seasonal Fruits like Kiwi, Strawberries, Blueberries, Pineapple, Grapes, Peaches, Orange, Apple, etc.
- Almonds Flakes- 85 gms
Method of Making The Tempting Fruit Cake:
- First of all, you need to pre-heat your oven to 180 degree centigrade for at least an hour.
- Now line two cake tins of 8 inches or 20 cms diameter with parchment paper. Also, butter the parchment paper well so that the cakes don’t stick.
- Now take a large mixing bowl and put the butter and sugar. Whisk them well until you reach a pale, soft, and creamy texture.
- Take another bowl and put the eggs there and beat them well. While doing so add the butter and sugar.
- While beating the eggs also keep whisking the butter and sugar until you achieve a smooth batter.
- Now add the vanilla extract in it.
- After that take another bowl and mix flour and salt together.
- Then fold these dry ingredients into the creamy batter and give a nice mix.
- Now, you have to divide the cake batter into two equal halves and put them in the already prepared cake tins.
- Keep the cake tins inside your oven and bake for 20-25 minutes or until the cake turns golden and springy to touch.
- After 20 minutes, you can take the cakes out and check with a skewer if the cakes are done or not.
- Now, remove the cakes from the tins and let them cool which may take upto an hour or two.
- Meanwhile you can whip the cream with icing sugar and vanilla extract until it forms stiff peaks. Remember that the cream should be thick to spread and stiff enough to hold its position on the sides of the cakes.
- Chop the fresh seasonal fruits into small cubes.
- Now take one cake and apply this creamy mixture on it and spread a generous amount of fresh cut fruits.
- Cover it with the other cake and apply cream and fresh fruits again.
- Now, cover the whole cake from top to the sides with the remaining cream.
- Sprinkle the almond flakes on the sides and beautify the cake top with more fruits.
Your tempting fresh fruit cake is now ready to eat. But you can refrigerate it for 2 hours before serving your guests and family members.
